Homemade Marshmallows

Seriously who doesn't love marshmallows???? We almost always have a bag of them in the pantry. You just never know when you want to put it on a stick and roast it over your gas stove for a late night treat!!! Normal? yes it is.....  Honestly i didn't know you could till i saw it on pinterest once, and then i was like oh yeah adding that to my bucket list of things i must make. Yes i have a list of things i want to make scrolling through my head at all times.

I decided to go with alton browns recipe because that guy is like a mad cooking scientist, plus he had a video to watch and make sure i was understanding the directions right.

First off you will need to put 3 packs of unflavored gelatin in your kitchen aid mixer and 1/2 cup of ice cold water in. I gave it a little stir to combine and let it sit while you work on your sugar concoction. Use the wire whisk attachment for your mixer.

In your sauce pan add
1 cup of light corn syrup
1 1/2 cups of sugar
pinch of salt

I had trouble with getting my lid open so i got resourceful.

Then turn stove on med high and cover for 3-4 min. Remove lid and stick a candy thermometer in there till it reaches 240 degrees it will take about 7-8 min.
While that is cooking away get your pan ready. i used a cake pan anything will work depending on the style marshmallow you want to make. Spray the pan with cooking spray then
mix 1/4 cup of powder sugar
 1/4 cup of corn starch

in a bowl and sprinkle the greased pan with that to prevent your marshmallow from sticking. You will have left overs for sprinkling the top afterwards.

I Also added my pouring/side attachment to my stand mixer so i can pour my hot sugar mixture in once it's reached temp.

Once you get to 240 degrees remove from heat and turn your mixer on (your gelatin is in there already and it's begin to crackle. Slowly add the hot sugar mixer while the mixer is slowly mixing. Once added turn it on high and set the timer for 12 min. then add vanilla extract. i never measure that go with how much vanilla you like.



it's sticky so resist the temptation to lick the whisk.  Grease a spatula to spread it around. Be fast it hardens up fast then after spread dust the top with the powder sugar mix. You will have left overs still and you will use that when you remove it from the pan. Leave it uncovered for 4 hours or overnight.
remove from pan and cut in squares or use a cookie cutter for a fun design.   You will want to dust the marshmallows once cut with more of that remain powder. Nobody likes being sticky!

After we reached the time i cut them up and put sticks in them.

 I melted some chocolate and crushed up candy canes to dip the marshmallow squares in them. And placed them in the fridge to cool and set.

henry was on quality control and he ate every piece of candy cane that came off as i was setting it on the pan.

I am made the kids teachers a marshmallow treat for christmas. These are a yummy treat or as Erinn suggested to put in your hot coco. I like the way she thinks!
