Gluten Free Peanut Butter Blossoms
These are the easiest cookie you can ever make. I would say 96% of every household will have these ingredients unless they have a peanut allergy. The reason i didn't say 100% of people would have this because i normally don't keep chocolate kisses on hand. But i will pick them around this time because i know i will need them.
I got this peanut butter cookie recipe from here. The recipe is for pb chocolate chip sandwich cookies, which by the way are AMAZING! I usually will bring this cookie when i have to bring a treat somewhere. So since i love this recipe so much i figured i can tweak it a bit to make it a pb blossom cookie. My mom always made blossom cookies every Christmas so i would say there a christmas cookie then. You got to keep with tradition.
Preheat oven to 350 degrees

Preheat oven to 350 degrees
1 cup smooth peanut butter
1 cup brown sugar
1 egg
1 tsp baking soda
1 tsp vanilla
Mix them all together and drop them on a cookie sheet. I like to use the silicone baking mat so they don't stick and are easy to get off. I usually do a tablespoon size ball and flatten with my hand a bit. The other option you can do is roll the ball in sugar and then flatten the cookie before baking.
Bake for 10-12 min. then when slightly cooled top with a chocolate kiss.
These only make 16-18 cookies so i would say double if you want to share with others.
