Gluten Free Soft Gingerbread Cookies
I love making gingerbread cookies because you get to make little gingerbread men and cover them in frosting and fun sprinkles. My Grandma always made a giant gingerbread man for each cousin when i was a kid and i was so lucky to receive that giant cookie cutter.
I found my recipe for this cookie from two places and mashed them up into the recipe i am sharing today. My flour recipe comes from here. This flour recipe is one i make a big batch of and keep it on hand to use as my all purpose flour. And the ginger bread recipe comes from here.

2 3/4 cup of gluten free flour blend
1 tsp ground ginger
1 tsp baking powder
1 tsp cinnamon
1/2 tsp salt
2 tsp of xanthan gum
Mix these up in a bowl and set aside
In your mixer
1 1/2 cup of powder sugar
1/4 cup molasses
1/3 cup softened coconut oil
1/4 cup almond milk at room temp
1 tsp of vanilla
Mix these all up till combined. Then add the flour mixture to it and mix for 1-2 min.
Divide the dough up and wrap in plastic wrap and refrigerate for a hour or when you remember to finish baking your cookies! Mine might have been in there a few hours. Opps
Preheat oven to 350 degrees
I used my silicone baking mats and rolled out the dough on top of that. It helps with not sticking. This dough was a bit crumbly but if you only rolled out small amounts it worked out perfect. Bake for 7min. and cool on a baking rack.
Bella and i did this activity together and then i let her finish the cookies up with the decorating.
For the frosting take 2 1/2 cups of powder sugar and 2-3 tablespoons of almond milk and i put a splash of almond extract in mine.
