Calling all Peanut Butter Lovers..
I have found the most simplest pb and chocolate chip cookie recipe that is family approved! Oh and it's Gluten Free, and flour-less. The recipe calls for pantry staples and so when your craving hits you should have these items on hand. This is the cookie that your friends are going to request you to bring when a party is happening. You can make them as a sandwich or eat them just as they are but there so good! I would say it takes 20 min from start to finish.

My husband and kids prefer chunky pb so i just used that through out the recipe instead of the creamy pb she used.
Also a tip i have learned from the multiple times of making these cookies is to cut the filling in half. It makes way to much and you will still have plenty of frosting to lick from the bowl after you make your sandwiches. I also make the cookies a bit smaller because if your going to eat a cookie sandwich you don't need a huge cookie that will just give you a belly ache. I end up with 9 sandwiches and 1 cookie when i make my batches.
ingredients:
- 1 cup peanut butter
- 1 cup (packed) brown sugar
- 1 large egg
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- 1 to 1½ cups milk chocolate or semi-sweet chocolate chips
Peanut Butter - Cinnamon Cream Filling
- 1 stick butter, at room temperature
- ½ cup creamy peanut butter
- 1 teaspoon ground cinnamon
- 1⅔ cups confectioners' sugar ( I used 1⅓ cup)
