Awe ~Ha Moment
Scott and I had a evening to ourselves. That alone is Amazing and something that is rare for us. We probably didn't utilize it well but we are talking grown up stuff and figuring out our wants and needs when it comes vehicles, at the car lot. I guess the main part was we spent it together and that is all that matters!
That evening during our talks i was sharing how i have not been happy and feeling not myself emotional and physically. It wasn't because of the Mr. i just feel un -happy. I have been flying off the handle over stupid stuff, gaining weight, no energy, stomach aches, feeling like a major brain fog was happening. He also agreed that he noticed that about me, and said he too was not feeling all to great. We both were thinking back to when it started and we pinned it to when we started switching our regular meals with the gluten free replacements such as gluten free flours, the replacement pastas, and such.
It stinks because Kate is complaining less about tummy aches and we are complaining more. ugh i thought if we all do it we would feel amazing. So many people give up gluten to feel better but we are feeling worse, why????? So we agreed we would try to stick to the rice, meat, and veggies for meals and see if that improves. I didn't eat any gluten replacements that i mentioned above all weekend and i felt so much better, my mood was improved, and i didn't have the tummy aches like everyday before. I guess the proof is in the pudding, i just hope it continues and it's not a temporary relief.
So i planned the next weeks menu to have no replacement gluten free foods and see if it keeps the non celiac's feeling better and Kate continues to improve. She will have the gluten free bread because she loves it and doesn't seem to have a problem but the rest will be removed during this trial. I was worried that it was because i was going thru withdrawals from my normal carbs but honestly i think that is under control it's just some of us our bodies are allergic to the replacement ingredients that are in the gluten free food replacements. We will see!

crockpot chicken taco chili
loaded bake potatoes
beef stew
zucchini lasagna
roasted chicken and veggies
