Black Bean Brownies
So i have fallen in love with these super yummy brownies that are some what healthier for you then the normal ones. And there easy to make. So grab your food processor and whip up a batch for a afternoon snack.
19oz. can of black beans rinsed well
3 eggs
2 TBSP of apple sauce or canola oil
1/4 c coco powder
2/3 c sugar
1 tsp of baking powder
pinch of salt
splash of vanilla
1 tsp of espresso powder {super grounded instant coffee}
handful of bittersweet choc. chips {ghiraradelli is the only brand i found with bittersweet chips}
So i start with putting a couple spoonfuls of instant coffee in the food processor and making sure it super fine powder.
Then Rinse your black beans well.
Put everything in the food processor except for the choc. chips. And blend till smooth.
Pour in a 8 X 8 greased pan. Sprinkle choc. chips on top and bake at 350 degrees for 30 min.
Since I'm a lover of Carmel it's a must to drizzle a little on top and maybe a scoop of ice cream!
It makes about 9 pieces so double if you are going to bringing it to share.
