Homemade Kombucha

Our hard work has paid off we have waited not so patiently for our kombucha to be ready to drink. I would say we waited about a month, because we had to wait for scoby "trump" to grow from scratch, then waiting 11-14 days for tea to ferment, and finally waiting 3 days for the kombucha to get carbonated in the bottles. Well it was a success!!! It made 6 bottles of kombucha from our first batch, and we flavored them with a few different varieties.
I wanted to do one like my favorite GT flavor trilogy - so i put 4 organic frozen raspberries in the bottle and a few chunks of fresh ginger and 2 tsp of lemon juice.
Then i did a blueberry and ginger in one., gt
And finally Scott is not a fruit guy and he wanted it to taste more like soda. He came up with the recipe to put brown sugar and vanilla. His flavor was not favored in our family. He has since now gone to the brew store and bought a cola flavor to add to his. Unfortunately he will not be able to test that for another week while we wait for the next brew to finish up.


My kids have tried every flavor of store bought kombucha and was not big fans of them. I was happy they were willing to try them! They all tried the flavors we made and loved each one, which was awesome but now they have drank so much i have barely gotten any. Mmmm not cool!

Scott and i love learning about all the stuff that can help heal your gut and proactive solutions to optimize your body. We have spent so many years breaking down our bodies and filling them with junk and shoving down so many presciptions into our bodies. I am so glad we are learning more ways to help us and restore our bodies back to a better state. My husband loves podcast and listens to them to and from work each day and as i am cooking dinner i get a briefing of what new things he has learned! It's pretty cute!

Well back to kombucha.... Fermentation is a great way to restore your gut health. Kombucha is a fermented tea! This tea is full of probiotics, antioxidants, and vitamin B. There is many studies that say it gives you energy, helps with your allergies, helps with digestive issues, Candida, and whole bunch of other stuff. Doesn't that sound good?

Am i making you want to go brew a batch for yourself? I recommend it, the whole process is fun to watch it develop and making up new flavors is a lot of fun. The best part is every time you brew a new batch of kombucha you are also making a new scoby. You can pass that to a friend so they can join you in this brewing fun, or make more batches. We now have 3 jars brewing so we can keep up with demand!

So we have had 2 rounds of kombucha made and the first round was good but not a strong vinegar flavor which i love, the second round we let it go longer so it had a good tart vinegar flavor before we flavored it. And between those two batches i would say i like the more vinegar flavor but the rest of the family did not. So i think every other batch we will be either brewing less or more so everyone is happy. That is the nice part of doing and making things yourself.

after you stop the brewing process and bottle it up and wait for the carbonation you kombocha is still working hard and makes a little mini scoby. You can drink it or you can strain it out.

  1. I wonder if what is growing is kind of like what used to be in vinegar that we called "mother". You don't see it anymore so I'm sure they "made it better" so you don't have to deal with it.but was probably good for you.
