Rhubarb Crisp ~ Gluten Free

Tis the season of rhubarb.  I love it so much... and i am the only in the family that likes it. I'm not crying over that at all, i get enjoy this yummy treat and i don't have to share.

I have been trying different recipes to find the best gluten free option.  Instead of making a big pan of crisp i have been making them in a ramekin.  I also have added strawberries or blueberries or both when testing them out. i am not picking on my mixed berry!

I think i found the recipe i really like.

This recipe is for one!
For the filling~
Take a ramekin and fill it with what every fruit you like and fill it till it's almost to the top of the dish. Then i throw it back in a bowl and mix it with some sugar. You can use regular sugar or i just add one packet of trivia and mix it up. pour that back in the ramekin.

For the topping~
 Add couple of tablespoons of gluten free old fashion oats
couple of tablespoons of brown sugar
dash of cinnamon and nutmeg
pinch of salt
and couple of tablespoons of almond flour. (which is basically just ground up almonds really fine)
1 tablespoon of butter or coconut oil


Mix it up till its crumbly and pour it over the top of your fruit.

Bake it at 350 for about 30 min. or till bubbly.

This has been a nice afternoon treat when henry naps!  Shhh don't tell him my secret!






in these pictures i used the butter instead of the coconut oil. I think i like the coconut more i like the flavor of coconut oil!
